You will learn all the pastry chef techniques to make your own Madeleines, Opera cake and Fraisier.. And best of all, eating your own product and sharing them with special people.
Element performance criteria:
- Mix and rest the madeleine .
- Bake a mousseline cream for the Fraisier..
- Make a biscuit Joconde.
- Make a genoise.
- Make traditional Italian meringue butter cream.
- Make ganache.
- make some simple cake decoration.

Recipe book and apron will be provided at the beginning of the course, for students to keep.
