What you will learn in this course: In this course you will make a two tier red velvet mud cake, mask it with ganache and then decorate it with a range of chocolate garnishes. If your chocolate skills need a brush up, this training is for you.
Element performance criteria:
- Make and bake a two tier red velvet mud cake from scratch. (The original with beetroot )
- Melt dark chocolate for modern ribbon.
- Make a range of chocolate garnishes – rolls, scrolls, shaving, cigarettes.
- Mask cakes with ganache.
- Make modern chocolate flowers.
